Fried Polenta with Mozzarella, Shrimp and White Truffle Oil |
- 1 tube firm polenta
- Mozzarella cheese, sliced
- A dozen or so shrimp, peeled, cleaned and de-tailed.
- White truffle oil
- Olive oil
Directions
- Slice polenta into 1/4" slices, set on paper towel to absorb excess water
- Preheat oven to 350F
- Heat some olive oil in a pan
- Fry polenta in oil until lightly brown on both sides (about 3-5 minutes per side)
- Put polenta on greased cookie sheet.
- Put a slice of mozzarella and a shrimp or two on each slice of polenta
- Drizzle white truffle oil over the top of each piece
- Put sheet in oven and bake until cheese is melted (about 10-12 minutes)
- Optionally you can put a dollop of marinara on each slice as well before heating
