Spud's Choice Hot Noggin Sauce

     First, a couple clarifications. We did NOT give any hot sauce to our The Spud. Also, for those who like to needlessly panic, that's a sweet red banana pepper on her noggin'. We know better than to handle our little tater with hot peppery hands. To review: No Spuds were harmed in the making of this sauce. This particular sauce came about as an attempt to use up surplus peppers. I chose only red colored peppers since that was what I had the most of. I ended up with what can best be described as a sriracha variant. The sauce starts sweet and a bit garlicky, then you get a serious punch of heat that quickly levels off before slowly fading. Much like sriracha, I see this being a multipurpose sauce, topping everything from eggs to meats. As always, notes and changes are in blue.

Spud's Choice
Hot Noggin Sauce
Ingredients
(yields just shy of 3 half pint jars)
  • 1 cup cayenne peppers, stemmed and roughly chopped
  • 1 cup red jalapeno or Serrano peppers, stemmed and roughly chopped
  • 1 cup bird or Thai peppers, stemmed and roughly chopped
  • 1 cup red banana peppers, stemmed and roughly chopped
  • 12 cloves garlic
  • 1/2 cup white vinegar
  • 3 tablespoons sugar
  • 3 teaspoons seasoning salt
Directions
  1. Load peppers and garlic into a food processor. Blend until a thick paste (the peppers, not you)
  2. Dump the peppers into a nonreactive pot. Add the remaining ingredients and stir to incorporate.
  3. Place on medium-high heat and bring to a boil, reduce to simmer and simmer for 5 minutes, stirring regularly.
  4. If you plan to use the sauce right away, you're done. It will keep in the fridge for a couple weeks. If you plan to can the sauce, proceed to the next step.
  5. Load sauce into 1/2 pint jars, leaving about 1/4" headspace. Seal with a 2 piece lid. Place in boiling water bath for 12 minutes. Remove to wire rack to cool. As always, make sure to refer to the National Center for Home Food Preservation for useful tips on how not to accidentally poison your friends and family.

Black Bean and Rice Enchiladas

     Call me a purist, but I like my enchiladas filled with meat. When I see fillings like beans and rice I tend to wonder why somebody would put the side dishes inside my main course. However, The Wife wanted to try this recipe and if The Wife ain't happy, nobody's happy. After making these, I will grudgingly admit they are pretty good. Granted, they would be much better if there was shredded chicken or ground beef in there. Next time I may add that along with the regular filling. We made a few notable changes and it resulted in a pretty spicy enchilada. These even served as a breakfast with some scrambled eggs and hot sauce. All in all, we'll call this one a winner and likely add it into the rotation. As always, notes and changes are in blue.

Black Bean and Rice Enchiladas

Ingredients
  • 1 green pepper, chopped (we used a yellow bell pepper)
  • 1 medium onion, chopped
  • 3 garlic cloves, minced
  • 1 tablespoon olive oil
  • 1 15-ounce can black beans, rinsed and drained
  • 1 14.5-ounce can diced tomatoes with green chiles (didn't have this. We used a can of fire roasted tomatoes and added a couple teaspoons of chopped pickled jalapenos)
  • 1/4 cup picante sauce (I never have picante in the house. I doctored up a sauce from a leftover can of chipotle peppers in adobo)
  • 1 tablespoon chili powder
  • 1 teaspoon ground cumin
  • 1/4 teaspoon crushed red pepper flakes
  • 2 cups cooked brown rice
  • 8 flour tortillas (8-10 inch size), warmed
  • 1 cup salsa
  • 1 cup shredded cheddar cheeze
  • 3 tablespoons chopped fresh cilantro
Directions
  1. In a large, nonstick skillet, saute pepper, onion and garlic in oil until tender. Add the beans, tomatoes, picante, chili powder, cumin and red pepper flakes; bring to a boil. Reduce heat; simmer uncovered until heated through and mixture thickens. Add rice; cook 5 minutes longer or until heated through.
  2. Coat a baking dish with nonstick cooking spray.
  3. Spoon a rounded 1/2 cup of the filling down the center of each tortilla. Fold sides over fill and roll up (sides? How does a circle have sides? Maybe the top and the bottom side, but I don't think that's what they mean. Possibly the edge? Fold the edges over? That sounds right. I'm guessing they must have failed geometry) Place the rolled-up tortillas in the baking dish. Spoon salsa over each tortilla. Cover with foil and bake at 350F (180C, Gasmark4) for 25 minutes.

  4. Uncover and sprinkle with cheese and cilantro. Bake 1-2 minutes longer or until cheese is melted.

Thai-Style Curry Chicken Soup

     We are always on the lookout for quick and easy weeknight meals. If they are low in calories, even better. If it tastes good, too, that's a bonus. The Betty Crocker 300 Calorie Cookbook yielded a recipe that filled all the criteria! It also filled out stomachs, which was nice. Is this an authentic Thai soup? Probably not by a longshot. However, it's a fair approximation and comes together in under 30 minutes. The curry and jalapeno give it a nice bite. This is a good soup for a cool weeknight dinner. It's also a good way to use up leftover chicken. As always, notes and changes are in blue.

Thai-Style Curry Chicken Soup

Ingredients

  • 1 carton (32 ounces) chicken broth (we rustic types don't use broth from a carton. We use real chicken stock we made from real chicken carcasses)
  • 3 tablespoons packed brown sugar
  • 2 tablespoons soy sauce
  • 2 tablespoons rice vinegar
  • 2 teaspoons curry powder
  • 1 small (about 1/2 cup) red bell pepper, coarsely chopped
  • 1 small jalapeno chile, seeded, finely chopped (leave the seeds in if you want extra heat. I went ahead and seeded mine because it was a much larger than the "small" the recipe calls for)
  • 2 cups chopped cooked chicken. 
  • 2 tablespoons chopped, fresh cilantro (I used 2 teaspoons dried)
Directions
  1. In a large saucepan, stir all ingredients except chicken and cilantro. Heat to boiling over medium-high heat. Reduce heat to medium. Simmer uncovered 3-5 minutes or until pepper is crisp-tender.
  2. Stir in chicken. Cook 1-2 minutes or until chicken is hot. Stir in cilantro just before serving.

Sweet Potato Wedges with Chile Cream

     Sometimes you find a recipe so simple, you can't believe it can be so good. I'm fairly sure I dug this one up a few years ago from Bon Appetit magazine. Regardless, it's a rock solid recipe. I've served it as a side dish in the past. This year I served it as a snacketizer. There's plenty of room for personal interpretation as far as the chipotle pepper sauce goes. You can use hot or mild sauce depending on how big a wuss you are. Actually, I've found that the Taco Bell Bold & Creamy Chipotle Sauce is a fine addition to this recipe. Don't judge me. As always, any notes are in blue.
Sweet Potato Wedges
with Chile Cream

Ingredients:
  • 1/3 cup sour cream
  • 3 tablespoons finely chopped green onions, divided
  • 2 teaspoons chipotle hot pepper sauce
  • 2 teaspoons fresh lime juice (or use the stuff in the plastic lime, I won't tell anyone)
  • 3 pounds medium sweet potatoes, cut lengthwise into ¾ inch wedges, with skin (when I serve them as a snacketizer I cut those wedges in half width-wise)
  • 3 tablespoons olive oil
  • 1 ½ teaspoons ground cumin
Directions:
  1. Whisk sour cream, 1 tablespoon green onion tops, chipotle hot sauce and lime juice in small bowl; cover and chill.
    Sorry.
  2. Preheat oven to 425F. 
  3. Combine sweet potato wedges, oil and cumin in large bowl. Sprinkle with salt and pepper. Toss to coat. 
  4. Arrange potato wedges on a baking sheet. Roast until tender and browned in spots. About 20 minutes. 
  5. Season to taste with salt and pepper. 
  6. Place wedges on large platter. Drizzle chile cream over. Sprinkle remaining green onions over top. You can also serve the cream in a small bowl for dipping.
